This pesto is made of wild garlic also known as ramson, or gyoujaninniku in Japanese which has been foraged in the mountains of Hokkaido. This wild vegetable can only be found in a short amount of time during spring, after the snow melts and used to be one of the vegetables eaten by the Ainu people because of it’s high nutrients. The pesto is an additive-free product, made with ramson, organic olive oil, walnuts and cheese.
